Clos Vougeot Grand Cru 2018
Clos de Vougeot is a wine whose name is among the best known in the world. The appellation has about fifty hectares, divided into a multitude of plots owned by as many estates. The wines of Clos de Vougeot will not all be the same, it is very important to select the wine and its producer.
Here the clay limestone terrain dominated by Bathonian limestone with outcrops of Bajocian marls, covered with deep clays with few pebbles.
After receipt at the estate, the grapes are placed in the vats for 12 to 15 days. The first 3 days the temperature is maintained between 16 and 18 ° C. This technique makes it possible to preserve the primary aromas in the wine. Then the temperature of the tank passes between 28 and 33 ° C.
The wines stay 15 months in the cellar before being bottled. During this period the wine undergoes a second fermentation called malolactic fermentation which allows it to stabilize its structure.
He spent about 12 to 16 months of his life in oak barrels, a third of which were new barrels, to give him the necessary tannin. After this time the wines are prepared for bottling.
The CLOS DE VOUGEOT of the Dubois & Fils estate are harmonious, racy, elegant wines, with the color of a deep red. They are noticed by their bouquet with exceptional aromatic intensity where concentrated scents of red and black fruits (cherries, blackberries, blackcurrants), undergrowth, violet and, with age, fur (hare belly and musk) mingle.
On the palate these ample, fleshy, muscular and long wines generally have a good balance between fine tannins, softness and discreet acidity. They have a long persistence.
Their strong structure guarantees these wines a long ageing. In an average year, the CLOS de VOUGEOT flourish between 5 and 10 years old. In great years, their holding in the cellar, until the peak can easily reach 25 years.
These powerful red wines will be best appreciated at a temperature close to 15-16 ° C. Prior unclogging of one to two hours is advised. For wines that remain young, the passage in a carafe provides good oxygenation, it improves the tasting. In this case, the serving temperature can be that of a good cellar
