Holy Roman Red 2018

This great red wine from Burgundy, the st Romain appellation with a ruby colour, comes from the 2018 harvest, large in quantity but also in quality! Hand-picked and bred with sweetness and precision in oak barrels, it brings the suppleness and finesse of the best red wines from the Beaune coast.

The bouquet of this Saint-Roman recalls the cherry and the red berries (red fruit, raspberry). After 4 to 5 years, its aromas evolve towards more ripe fruits, spices and smoked with fine and elegant tannins. It can be drunk from an early age with a potential for childcare of ten years.
Its passage in barrels is dosed to the point and brings slightly roasted notes at the end of the mouth and very discreet. All the space is left to the expression of the terroir.

Service temperature: 13 to 15 degrees Celsius

Saint Romain

The characters of the wines

Red : ruby red of good intensity and black cherry. Its bouquet recalls small red fruits (currants, raspberries and cherries). After 4 to 5 years, its aromas evolve to ripe fruits, spices and smoked with fine tannins and elegant. He can drink from a young age with an ageing potential of ten years.
White : pale gold with green glints. On the nose, the full range of linden, white flowers, with a few accents of minerals. It offers on the palate with a good minerality that the time rounds off by revealing a good softness.

Sommelier's recommendation

Red : the sleek profile and smoothness of this classic burgundy is accompanied by a perfumed nose and sometimes smoked, which makes them absolutely perfect for the agreements with white meats and poultry in light sauce. A veal just pan-fried or in a stew it will accommodate without great resistance. For cheeses, choose the soft and creamy like the
brillat-savarin or cîteaux.
Service temperature : 13 °to 15 ° C.
White : its minerality makes it the friend of the delicate fish, pan-fried, or even better steam. Omelettes and poached eggs, the vegetables just seized or pickled like them a lot too. Very well also on soft cheeses like camembert, whose creamy texture will be well balanced by the acidity and slightly mineral this fine wine.
Temperature of service : 12 à 14 °C.

At the foot of its high cliffs, Saint-Romain occupied by Côte de Beaune a higher position. The landscape widens here into broad perspectives. Frequented by bears and lions, there are over 100 000 years old, this site receives of outbreaks of human life very active since the neolithic. This is one of the first sanctuaries of the vine in celtic and gallo-roman Burgundy. Established in 1947, theAppellation d'origine Contrôlée SAINT-ROMAIN is red (Pinot Noir) and white (Chardonnay). The Climate (locality linked to a terroir) will often be given on the label. The red wines could be labelled as Côte de Beaune after the name of the village, or even to be called Côte de Beaune-Villages.

For the one who loves geology, it is a true happiness ! It is the country of the lias. This vineyard takes a position on the slope, taking advantage of its softness and excellent soils. In this ensemble, marl and limestone, of the banns of clay are perfectly suited to the Chardonnay. The vines are exposed south/south-east and north/north-east, between 280 meters and 400 meters of altitude approximately.
