The famous Burgundy Aligote is a wine from the grape variety of the same name, grown exclusively in Burgundy.
Grape variety resistant and high yielding, it adapt more easily to situations of soil and exposure are less favourable.
Long considered a wine that is more austere (to mix with liquor sweet, especially the cream of cassis to réaiser the famous Kir), it has acquired its letters of nobility over time. The best Bourgogne Aligoté will be able to find in the Cote Chalonnaise, where the grape seems to have found its terroir of predilection. There is even now a village appellation, Bouzeron, located near Rully, made exclusively from the grape variety Aligoté.
Today the Bourgogne Aligoté can be enjoyed alone as appetizers or as an accompaniment to seafood, for example.
