Recipe for Beef Bourguignon

Here is in exclusivity the recipe for Beef Bourguignon-traditional, such as that made by my grandmother :

Recipe of Beef Bourguignon for 6 people

-3 pounds of Paleron (or surf or twin)
- 2 slices of streaky bacon

- 2 white onions
- 1 bottle of Burgundy passetougrain red
- 3 tablespoons of butter
- 3 tablespoons of flour
- a little oil
- 1 mirepoix
- Bouquet garni
- Salt and Pepper


Fry in a casserole the lard, diced, and thinly sliced onions. Add the mirepoix. Add the meat cut into large cubes and let then well come back. Wet the red wine, season with salt and pepper. Add the bouquet garni. Cook gently for 2 to 3 hours. At the end of cooking, bind the sauce with the butter handled .Serve with potatoes cooked in the steam.
